FOOD & DESIGN IN A SINGLE BITE
I have been passionate about combining design and food for a long time. Food is a spectacular material for designers, as it involves all senses: sight, smell, touch, taste and sound. The colour, texture and form must also be taken into consideration.
INSPIRATION
The presentation of my food is inspired by the French verrines: appetizer or dessert served in a very small transparent glass or bowl that highlights layers of colour and texture. Ingredients can be sweet or savoury, hot or cold, raw or cooked, creamy or liquid — just about anything with contrast to create an element of surprise for the diner.
To the verrine, I add the essence and attraction of Italian food: I like real food which hasn’t been messed around with any more than is necessary. This means using super fresh ingredients which are home-grown, local or organic, and free range where possible.
WHAT’S IN A NAME?
Pairing cheese with pears may appear as an innovative idea, but it is actually a classic. In fact, there is an old saying in Italian that goes:
“Don’t make the farmer aware,
of how good cheese is paired with pears!”
the idea being that, if he had any idea how delicious the pairing is, he would never give either to you!
At P&P we want to create a selection fun dishes, that looks as good as they tastes and offer unexpected flavours combinations.
